About the Role:
San Jose Country Club in Jacksonville, FL is looking for a talented and passionate PM Garde Manger Line Cook to join our culinary team. This is your chance to showcase your craft in a prestigious, member-focused environment where quality and creativity are celebrated every shift.
Responsibilities:
- Prepare and execute cold-side dishes including salads, charcuterie, terrines, and composed appetizers for evening service
- Maintain garde manger station setup, organization, and cleanliness throughout PM service
- Follow standardized recipes and plating presentations to ensure consistency and quality
- Collaborate with the culinary team to support smooth, efficient dinner service
- Monitor and rotate food inventory, ensuring proper storage and freshness of cold-side ingredients
- Adhere to all food safety, sanitation, and health code standards
- Assist with prep work and support other stations as needed during service
Requirements:
- Previous line cook experience, with garde manger or cold-side station experience preferred
- Solid knife skills and knowledge of cold food preparation techniques
- Ability to work efficiently in a fast-paced, high-volume kitchen environment
- Strong understanding of food safety, HACCP, and proper sanitation practices
- Reliable, punctual, and able to work PM shifts including weekends and holidays
- Team-oriented attitude with a strong work ethic and attention to detail
- Culinary degree or equivalent professional kitchen experience a plus
